LEAFY POPCORN SALAD

INGREDIENTS

  • 4 cup Baby Kale Blend
  • 1 cup Pea Shoots
  •  ½ cup Pickled beets
  • ½ cup Bacon bits
  • ½ cup Dried Cranberries
  • ½ cup Sunflower and Pumpkin seeds
  •  ½ cup Siracha Blend Popcorn

INSTRUCTIONS

  1. For the Dressing, in a food processor combine all ingredients and puree for 1-2 minutes until smooth. Season with salt and pepper.
  2. To plate the salad: Place ½ cup of Kale blend on the centre of the plate, garnish with a tsp. each of beets, bacon, cranberries, seeds and popcorn. Finally placing 1Tbsp. pea shoots over the entire salad. Drizzle 1 tbsp. of dressing over salad.

Chef Darryl Fletcher’s (ChefD) inspiration to pursue a culinary career began while watching Graham Kerr (The Galloping Gourmet) and trying some of their recipes at home.

He is a graduate of the Chef program at Humber College in Toronto, Canada.

ChefD’s career has grown from humble beginnings cooking in his hometown of Kitchener, Ontario, before travelling and learning techniques from all over North America, and then finally coming back home.
